Co-Op Saison: Simondium Farmhouse Ale

Soul Barrel is built within the old cellars  of the Drakenstein Co-Op, the first winery Co-Op in South Africa, founded in 1906.  Drakenstein’s fertile valley has served generations of farmers by yielding fruit, grain and grapes for centuries.   Saison’s are traditional ales that were brewed to nourish the farm workers during harvest, the Saisonniers.  Co- Op Saison honours the farm’s heritage and is brewed with local barley and wheat malted in our cellar, chardonnay fruit from the farm, flowers and hops from our garden.  It was open fermented in our coolship with a mixed culture of native yeasts from our natural surroundings. This fermentation and local agriculture represents a brewing tradition as old as the Co-Op, giving the beer a distinct sense of place, or terroir.   It’s our mission to create purposeful ales and lagers that reflect the Cape Winelands.  It is a nuanced beer; tart, dry, refreshing and flavourful, distinguished in its elegance and complexity. 5.4% abv and 25 ibus (Sold as 375ml bottle)
